The Atkins’ Diet
Originating way back in the 1960s, the famous atkins diet is still widely used today. Having many well known film stars amongst its supporters, it enables weight reduction but still allows you to eat many foods that would not be part of a normal diet, such as meat and eggs.
Unlike other diets, with the atkins diet you are supposed to eat fat and protein, it is the carbs that are on the banned list. Because of this, it is known as a low carbohydrate/high protein, weight loss regime.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
Unlike other diets, on the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods such as meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil.

3 c Dried apricots (2 lbs)

2 tb Grated lemon zest

1/2 c Fresh lemon juice

1/2 c Honey

3 tb Finely chopped crystallized

Ginger In a heavy saucepan, combine apricots, lemon zest, 1/4 cup lemon juice and 2 cups water. Bring to a boil. Reduce heat to low and simmer, uncovered,

for 45 minutes to 1 hour, or until the apricots are soft. Transfer the apricots and the cooking liquid to a food processor and puree until smooth. Return to the saucepan, along with honey and the remaining 1/4 cup lemon juice. Simmer, stirring often, until very thick, about 1 hour. Stir in crystallized ginger and let cool. (The butter can be stored, covered, in the refrigerator for up to 2 weeks or in the freezer for up to 6 months.)
